I have seen some โsimpleโ recipes for pickling eggsโฆ.I have absolutely no idea if they are good or not. I know I will learn as I experiment with it. (Do you have any good recipes for it? Iโm not sure if you are able to do thatโฆ) I belong to the Facebook backyard chicken group, and I can post on there asking for some suggestions.
It will definitely be a great snack for Scott and me!
Scott called the plumber this morning to get an idea of when he may be here. His wife answers the phone for the business, and she told Scott that IF everything works out, he could be here at the end of next week. We were deflated to hear that, because Scottโs sister and her husband are coming to visit (and to help) on Tuesday, and we would love to have at least the toilets working when they are here. He told her that, and she said she would call David (the plumber) and ask him if he could possibly squeeze us in before Tuesday. Fingers crossed, Loo!!!! She will let us know some time today. ๐ค๐ค๐ค๐ค
As far as how giving away eggs makes me feelโฆ..I feel first and foremost thrilled that the hard work of my hens will be appreciated and not wasted. (Itโs crazy how proud I am of those eggs and my hens!) Then I feel so pleased that I can give them to people who appreciate farm fresh eggs. I purchased egg cartons back when they first started laying, and I am down to about 20 of them left. There were 100 in the order!! I have reused some cartons for people who returned them to me, so that means when they are all gone, I will have collected over 100 dozen eggs!! Thatโs crazy!
You asked if there is anything else I am looking forward to making once the stove is ready to goโฆ..great question. I am looking forward to making anything that has to be put in an oven, because the oven in the RV is so incredibly small and does not heat up enough for me to make anything that needs to be put in the oven. I would love to make a batch of peanut butter cookies! I make a mean peanut butter cookie with a recipe that I have in a Betty Crocker cookbook that my mother gave me when I got married so long ago. I would also love to make a lasagna or enchiladas, which I am also very good at. I am really really looking forward to inviting some of our dear friends over for a meal when this is ready-thatโs gonna be so cool!
Yesterday I worked on polishing the bookshelves and part of one of the dressers as well as continuing cleaning out the drawers in the kitchen. The pantry is almost doneโฆ Now my turn comes inโฆ I am going to cover the nail holes with that putty and then wait for it to dry and then paint over them. Scott did an amazing job with that pantry! I have never had such a beautiful pantry, and I am so excited about it! Scott has so many God-given skillsโฆ We are so blessed!
